Ok. Low(er) carb, high(er) protein cookies. I thought I had a different flour in my cupbard but alas, I did not, so I settled for regular old flour. The new and improvedpost-workout cookie sandwich recipe. Faster, better, stronger, protein…ier. Mostly, I replaced the vegan butter with fresh ground almond butter, the espresso shots with espresso powder, semi-sweet chocolate with dark chocolate, and replaced a 1/2 cup of oat flour with a scoop of my favorite vanilla protein powder. All good things.
